Created in partnership with internationally renowned cheese expert Will Studd and his children, Sam and Ellie Studd, High Cheese transforms the classic high tea into a sophisticated celebration of artisan cheese. Held every Friday in The Gallery, the experience feels like the perfect way to ease into the weekend, combining elegant surroundings, exceptional produce and generous hospitality.
From the moment we arrived, there was a sense of occasion in the air. The Gallery was buzzing with groups celebrating birthdays, friends catching up over tea and couples enjoying a leisurely afternoon.
The experience begins with a selection of inventive savoury bites that immediately set the tone. The standout is the Whipped Galotyri Crostini, served on a delicate beetroot cracker with fresh fig, salmon caviar and honey harvested from the Sheraton’s own rooftop beehives. The combination is beautifully balanced, offering creamy, sweet and savoury notes in every bite. The Fried Aphrodite Haloumi features crispy golden halloumi drizzled with saffron habanero honey that delivers a delicious balance of sweetness and gentle spice.
A highlight of the menu is undoubtedly the signature cheese course. Featuring Roquefort, Brillat Savarin and Manchego, the selection showcases three distinctly different styles of cheese. Each is accompanied by thoughtful pairings including quince paste, honeycomb, grapes, buckwheat lavosh and crisp charcoal crackers. The quality of the cheeses is exceptional, and the accompaniments enhance rather than overpower.
The baked camembert is served warm and gloriously gooey alongside raisin bread and feta and chive scones. Designed for sharing, it quickly becomes the centrepiece of the table. Spread generously over the warm scones, it is comfort food elevated to luxury status.
While the cheese course is unquestionably the hero of the experience, the dessert course deserves equal praise. Rather than simply adding cheese to traditional sweets as a novelty, the pastry team have created desserts that genuinely showcase the complexity and versatility of cheese.
The Basque Galotyri Cheesecake is creamy and light, with a blueberry centre that adds just the right amount of brightness. The Le Dauphin Double Crème Profiterole delivers pure indulgence with its rich filling and delicate pastry. The standout for us, however, was the Manchego and Orange Blossom Friand. Moist, fragrant and beautifully balanced, it demonstrates how well cheese can work in dessert when handled with skill and restraint.
The expertise of the Studd family is evident throughout the menu. Every component feels carefully considered, highlighting exceptional cheeses while introducing guests to creative and unexpected combinations. The staff are knowledgeable and enthusiastic, adding another layer to an already memorable experience.

What makes High Cheese particularly appealing is that it offers something genuinely different in Sydney’s dining scene. It retains the elegance and ritual of a traditional high tea while replacing cucumber sandwiches and sweet pastries with a menu that feels more sophisticated, generous and satisfying.
